Acai Coconut Energy Balls

Acai Coconut Immunity Balls Recipe | Pitaya Foods RecipesThese no-bake energy balls are a big hit with both kids and adults! This sweet snack holds over your hunger, gives you a boost of energy to take on the day and it loaded with powerful antioxidants and fiber. Pack as a snack or as an on-the-go breakfast, no utensils required!

  • 2 tbsp Acai Berry Powder
  • 1 cup quick oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1 tbsp chia seeds
  • 1/4 cup mini chocolate chips
  • 1/3 cup unsweetened coconut flakes
  1. In a large bowl, combine oats, almond butter, honey, acai powder, vanilla, and chia seeds and stir until well combine.
  2. Blend on medium to high for roughly 30 seconds or until desired consistency.
  3. Scoop a tablespoon-size serving and roll in your hands to form a sticky ball.
  4. Place coconut flakes in a shallow bowl and roll each ball around to cover with the coconutflakes.
  5. Store in the fridge in an airtight container for up to 2 weeks.

NOTES:
  • Replace almond butter with any other nut butter.
  • Warm the nut butter and honey in the microwave for 15-20 to make it easier to stir.
  • Old fashioned oats can be used instead of quick oats. Grind them in a food processor to make a smoother texture in the energy balls.
